Located in Komatsu City, Ishikawa Prefecture, Imo Kuri Kabocha is a dessert shop specialized in high quality Japanese chestnut dessert “Mont Blanc,” which was born out of the desire to deliver the delicious autumn flavors of “imo” (potatoes), “kuri” (chestnuts) and “kabocha” (pumpkins) throughout the year. Using carefully selected ingredients from all over Japan and based on the its own recipes, the shop offers one-of-a-kind chestnut cream cakes with rich and delicate flavors that melt in your mouth. The shop’s original chestnut puree in the form of 1.2mm-thin vermicelli make the cakes visually appealing.
From ingredients, production method to its appearance, the shop is committed to create its products without compromise to ensure a truly authentic taste. This product, “Gashu Hyakumangoku Suisho” was made with ingredients sourced only from Ishikawa Prefecture. Kaga Domain, which was a domain of the Tokugawa Shogunate of Japan during the Edo period from 1583 to 1871, was one of the wealthiest in Japan as symbolized by the term “Kaga Hyakumangoku.” The region’s glittering history of prosperity has been expressed in this Mont Blanc dessert by only using selected local ingredients.
While most typical Japanese Mont Blanc use sponge cake or tart base, this version uses a fresh kuzumochi cake filled with three kinds of paste: Japanese chestnut wrapped with strained bean paste, chestnut paste and custard paste. Then, the cake is topped generously with the shop’s signature ultra-fine vermicelli made with locally grown sweet potatoes, chestnuts and pumpkins. Roasted chestnuts from Matsuo Kurien chestnut orchard in Noto as well as “Gorojima-kintoki” sweet potatoes and “Utsugi Akagawa Amaguri Kabocha” pumpkins, which are traditional Japanese vegetables of Kaga region, are used for the paste. The beautifully decorated Mont Blanc that delights both the palate and the eyes has a unique texture and is a perfect treat for yourself or a loved one.
