MOTOSUE was founded to bring to customers nutrition-rich egg sweets that have been a staple of Sumihei Ryokan, a hot spring inn with a long-standing history since 1868 in Tangocho Taiza, Kyoto prefecture. The shop’s vision is to make sweets infused with hopes for health and happiness. The shop name MOTOSUE also means “the root of all happiness.”
MOTOSUE Pudding is the shop’s top product made with fermented anko red bean paste and rich custard. The unique combination gave it the nickname Anko Pudding, a decadent match of fragrant azuki beans and custard to create an elegant, multilayered flavor.The ingredients are sourced only from carefully selected producers, a principle that is shared with the established hot spring inn that prides itself in the spirit of hospitality. The eggs are carefully chosen to suit the rich and nutritious flavor of the pudding, and ensured their safety by using only non-genetically modified organisms (non-GMO) produce. The fermented anko paste is made by Nagao Shuzo, an established brewery in Kyoto. While fermented anko does not contain sugar, it still has sweetness as well as a rich aroma, and has been gathering interest amid the fermented foods trend.With its history of over 150 years, traditional techniques and unwavering spirit, the shop is working daily to create products that are delicious for the customers’ heart and body.
