Horikawa burdock is one of “Kyoyasai,” or heirloom vegetables traditionally grown in Kyoto Prefecture. It is a thick burdock that has a diameter of about 10 cm, and compared to standard burdocks, it is more fragrant and flavorful while containing more inulin, dietary fiber, minerals and vitamin B1. Particularly, vitamin C content is about three times higher. Also, because of its special cultivation method that takes two years to grow, Horikawa burdock is known as a valuable vegetable that only a few farmers can produce.
This shrimp cracker is made 100% from Horikawa burdock and ingredients sourced locally from farmers in Kyoto. Baked slowly at low temperature without using oil, the thin shrimp crackers are healthy and let you enjoy a nice aroma as well as pleasant, crunchy texture, allowing you to savor the rich flavors of Horikawa burdock.
