Its original brand chicken, the “Mitsuse Chicken”, developed in Mitsuse Village, Saga Prefecture, is a slow-growing breed of red chicken reared for its delicious meat quality. While Mitsuse Chicken is carefully raised under animal welfare principles, utilising every part of the bird without waste presented a challenge. Particularly challenging was the meat around the bones; even when collected using specialised machinery, it often contained small bones, making it difficult to utilise as an ingredient. This product was developed in response to the request to find a way to utilise this very ingredient. By fermenting this material using the power of koji, a new seasoning was created that further emphasises the inherent aroma and umami of Mitsuse Chicken.  The manufacturer is Ebisu Shoyu, a company founded 148 years ago in Futsukaichi, close to Dazaifu in Fukuoka Prefecture. They are advancing a project called the Fermentation Grand Operation, which utilises the power of koji fermentation to transform food scraps and difficult-to-use ingredients into delicious seasonings. This product is the first to emerge from that project.
