Carefully selected seasonal pesticide-free and organic vegetables are used to create a four-variety veggie quiche assortment. Based on traditional quiche-making methods, it incorporates local ingredients such as “Komugi no Kanade” and “Omi no Tamago,” resulting in a flavorful, crispy pâte brisée and a rich appareil that brings out the umami of the ingredients. The quiches are crafted to enjoy the combination of vegetables and ingredients by incorporating unique recipes and cooking methods. As a brand philosophy, we emphasize consideration for a sustainable global environment throughout the agricultural (production process) to food service (consumption process). We produce pesticide-free and chemical fertilizer-free vegetables at our own farm (Mimosa Farm) and promote local production for local consumption in collaboration with local farmers through our food service (MimosaKitchen), advocating ZeroWaste initiatives and encouraging customers to “participate where possible.” Using seasonal ingredients, we ensure no chemical seasonings are used in the cooking process and incorporate new ideas and techniques to offer unique flavors and textures.
