Udon Honjin Yamadaya Flavorful Frozen Udon Bowls
UDON HONJIN YAMADAYA (YAMADAYABUTURYU Co., Ltd.) (Kagawa)
Produced by Udon Honjin Yamadaya, a long-established Sanuki udon restaurant in Kagawa Prefecture, the set of frozen udon bowls lets you enjoy the authentic flavors of the popular Sanuki udon at home.
The restaurant was founded in 1978 by Kiyoshi Yamada, the 15th head of the Yamada family, which led the area as a village headman known as “shoya” during the Edo period when villages were self-governing administrative units. After the Meiji era, the family flourished as the brewer of the famous sake “Genji Masamune.”
The udon noodles made with the restaurant’s original wheat flour using traditional technique of the region as well as the soup packed with natural umami flavors of the well-selected ingredients are what makes Yamadaya a popular restaurant, which at times as many as 3,000 customers queue up.
Born out of the hope of delivering the udon dishes served at the restaurant to busy people or elderlies who have fewer opportunities to cook, the udon bowls come frozen in individual serving so that the authentic flavors can be enjoyed easily and safely at home. In addition, the use of individual bowls instead of standard packaging also contributes to a reduction of over 25% in petroleum-based packaging materials. Four flavors of Udon Suki, Sukiyaki Udon, Curry Udon and Miso Nikomi Udon are available and can be stored in the freezer for up to six months. Since its launch, the series has been widely appreciated as it allows you to enjoy the delicious Sanuki udon of the popular restaurant simply by heating the frozen bowl in a microwave oven.

Variation
Four kinds
– Sanuki Unon Suki
Springy udon noodles served with beautiful golden broth based on kombu and bonito flakes packed full of umami of various ingredients such as fresh seabream from Setouchi and special chicken meatballs (tori dango).
– Sanuki Curry Udon
The main feature is the curry soup made with a wide variety of spices. The thick soup has an authentic flavor with added sweetness of onions and other vegetables. The stew-like consistency of the soup and its rich flavor go well with the noodles while the beef tendons (gyusuji) make it quite fulfilling.
– Sanuki Sukiyaki Udon
The carefully-selected Japanese beef has the right chewiness that melts in your mouth. The sweet taste maximizes the umami flavor of the beef used in abundance, which matches perfectly with the udon noodles that go down the throat smoothly.
– Sanuki Miso Nikomi Udon
The udon noodles are simmered in a Sanuki-style broth with a sweet flavor, which was made with a blend of white miso and awase miso (mixed miso) from a well-established miso store in Kagawa Prefecture. The mild sweet taste pairs well with the ingredients including fresh pork and pork meatballs.
