“Suridane” is a type of spicy seasoning that has been eaten in the eastern part of Yamanashi Prefecture for centuries. Yamanashi is known for local specialties such as “Yoshida no udon” noodles and “houto,” a miso-based noodle soup. Each restaurant has its original Suridane for spicy condiment toppings and is also widely enjoyed at home. In addition to red chili peppers and sesame oil, combinations of ingredients vary from store to store and home to home and each has its own taste.
Perhaps because Yamanashi Prefecture does not face the sea, local people have a strong longing for the sea. In fact, the consumption of tuna is among the highest in the country every year. People are also particular about seafood, and “kaisen (seafood) houto” is a popular menu at the company’s houto specialty restaurant located near Lake Kawaguchi.
