Shiawase Pudding
NAKAYA KASHITEN (Yamaguchi)
This rich, smooth pudding is made by applying the same method used to produce onsen manju, or steamed buns usually filled with sweet azuki bean paste, which is one of the popular local specialties of Yamaguchi Prefecture.
Now run by the fourth generation, Nakaya Kashiten is a Japanese confectionery shop founded in Yamaguchi City back in the Meiji era (1868-1912). Encouraged by the smiles and compliments from the customers, the shop has been dedicated to offering sweets that can be loved by the locals and contribute to the revitalization of the community.
Nakaya Kashiten began producing onsen manju in 1967 when hot springs (“onsen”) were discovered in the local area. Then, since 2014, it has been producing and selling Shiawase Pudding by applying the same production method as the manju buns that have now become a famous local confection. Pudding is one of the most popular sweets among people of all ages and genders. Named “Shiawase Pudding,” or “happy pudding,” the product carries the company’s hope of creating a unique pudding that can make many people happy.
The company is also focusing on using high quality local ingredients, such as milk and the eggs grown with rice. The smooth texture is achieved by using only egg protein to thicken instead of using a coagulant and steaming slowly just like in the same way onsen manju are made. The luxurious pudding is simple, yet you can enjoy the original flavors and richness of the eggs.
The puddings are available in three flavors: “Plain,” the classic custard flavor, “Kawaraketsumei Tea” made with local specialty healthy tea, and “Matcha” that uses Uji matcha green tea. Each pudding comes with a caramel sauce adjusted to suit each flavor.
