Truffle Boro Cookies

NIHONBASHIOIKAWA Kabushiki Kaisha (Tokyo)

Made by Nihonbashi OIKAWA, a kaiseki restaurant in Kyoto with a store in Nihonbashi, Tokyo, Truffle Boro Cookies are an assortment of baked sweets that infuse the flavor of truffles. The cookies were created by the restaurant from techniques and knowledge acquired in Kyoto cuisine in response to customer requests to make sweets that rival its cooking. Truffle cookies come in a beautiful red cedar box containing two sweet flavors in a set of 16 pieces—eight to be enjoyed with alcohol, and eight with tea. Truffles, almonds, rice flour and other delicious ingredients are used to really bring out the flavor of the sweets. Half of the sweets contain blue cheese and black pepper, giving a salty taste that goes perfectly with wine or sake. The other half contain cream cheese and have a slightly sweet taste, making them great as an accompaniment to tea. Both types are filling and satisfying, and have a complex, rich flavor. The sweets, combining Japanese techniques with Western ingredients, were created by a master of Kyoto cuisine, and are ideal as a gift for special occasions.
