The soft rice cracker is a harmonious blend of the flavor of rice, the fragrance of dark soy sauce, the richness of Shinshu miso and the delicious flavor of dried cibol. Made with 100% local Tochigi-produced non-glutenous rice, artisans carefully grill each cracker by the traditional wakuyaki (frame grilling) method.
Wakuyaki is a method in which the dough is placed in frames so that the rice cracker is not cooked too thoroughly to the core. This results in crackers much thicker than others, at around 15 mm thick. By using this traditional method, the product is rich in flavor with an airy, soft texture. While quite thick, once you bite into it, the cracker softly crumbles in your mouth, and you can enjoy the natural flavor of the non-glutinous rice. The rich flavor is produced by double dipping in specially-made dark soy sauce and Shinshu miso sauce. The cracks in the cracker, which creates its light texture, soaks up the flavorful sauces, which is further accentuated by the dried cibol sprinkled at the finish. The delicious rice cracker is not only a great snack for children, but also recommended for pairing with liquor.
