The “Ryujin” series of high-end stainless steel knives originated from Tsubame-Sanjo in Nigata, a city in Japan renowned for manufacturing and processing metals. Knife manufacturer Daishin Industry has a total of 19 types of kitchen knives and one type of cutlery such as steak knives and forks. The company boasts a top-class share in the domestic table knife manufacturing industry, and the products are made using its core technologies for processing stainless steel. The outstanding features of the Ryujin series is the sharpness and non-stick surface that come from the years of experience of metal processing craftspeople and their outstanding techniques.
The company carefully selected raw materials for the products. For example, the blade is made of domestically produced molybdenum vanadium stainless steel, which has excellent stability, strength and wear resistance. The handle is made of 18/8 stainless steel, which is resistant to rust and heat. The shape of the blade focuses on the golden ratio of curves and straight lines, and each one is hand-finished using the “Edo Togi (Edo style sharpening)” technique, which is said to be mastered by only a handful of craftspeople in Japan, resulting in outstanding thinness and sharpness. Some of the products featuring directly hammered tsuchime (indentations) on the blade are quite effective in enabling food to easily part from the blade. Combining this characteristic with the sharpness makes the knives even easier to use.
The company is devising not only the blade but also the handle. The surface of the handle is embossed in the same method as the Kamakura-bori carving craft to create an easy-to-grip, non-slip handle that feels like it attaches to your palm. In addition, hollowing inside of the handle makes the knives very light to give less stress and fatigue even when using for long periods of time. The blade and handle are integrated without using any screws, while maintaining high strength for stress-free usability that allows users to cut freely and lightly as if the knife is a natural extension of the hand.
The Ryujin series, which has been nominated by professional chefs and kitchen knife shops, is an indispensable and important partner in the kitchen.
