Kohakuto, which translates to “amber candy,” is a traditional Japanese sweet exquisitely presented made mainly with sugar and agar-agar, then added with pigments to impart colors. Known as “edible jewelry” from its impressively beautiful look, kohakuto candy has a unique texture. Its outside has been dried to crystalize the sugar so that it becomes crunchy while inside has a chewy texture of the agar-agar. Kohakuto has been talked about on social networking sites, etc. in recent times but actually, its history dates back to the Edo period (1603–1867). Saikadou’s kohakuto candies are made using infiltrated water of Tedori River originating on sacred Mount Haku in Ishikawa Prefecture through a traditional method developed by a well-established Japanese confectionery shop with 70 years of history. The yuzu extract provides a refreshing accent to the flavor, which makes it a versatile product that can be enjoyed as is, but also as a topping for cider, shaved ice and other sweets. Agar-agar is a plant-based gelatin derived from seaweed, kohakuto is a great option for those who are health-conscious while its long shelf life makes it a perfect gift.
