SANBE BURGER is a local hamburger shop in Sanbe-cho in Oda City in Shimane Prefecture. SANBE BURGER’s wasabi mayonnaise that is used in the popular Sanbe Wasabi Burger offered at the shop has been made available at home so that many people can enjoy the pungent taste and the crunchy texture of the wasabi anywhere.
Following the idea of local production for local consumption, SANBE BURGER is committed to use ingredients produced in Shimane as much as possible. The city of Ota is home to Mount Sanbe, which appears in “Izumo no kuni fudoki,” the ancient myths of the Izumo Province, and Sanbe wasabi that grows in the crystal-clear water from the springs of the mountain is known as a local specialty. Made by pickling wasabi leaves and stems, “wasabi zuke” has also been favored by the local people since ancient times. SANBE BURGER’s wasabi mayonnaise was developed based on the idea that it would also work well with hamburger patties.
After a year of development by consulting with experts, wasabi producers and design professionals, as well as test marketing, the product was finally brought to life in 2012. In consideration of health, the mayonnaise is made with perilla seed oil (Egoma oil) and wasabi zuke made by Otani Shoten with raw wasabi grown in the clear waters sourced from Mount Sanbe, which gives an excellent crunch texture and rich flavors. It is a perfect condiment to enhance the taste of all kinds of dishes.
Since the time of its launch, the product has used wasabi zuke from the local shop, Otani Shoten. However, the shop has closed its doors due to aging of the owner, so the recipe is now passed on to SANBE BURGER to keep the much-loved taste of the local specialty.
