Produced by Kadonaga Seafoods Co., Ltd. engaged in crab processing since 1953 in Sakaiminato, Tottori Prefecture known as a famous fishing city, this bagna cauda uses “kani miso,” or a greenish tomalley paste found inside the crab as a base. The city is one of the major producers of beni-zuwaigani, or red snow crab, in Japan. The kani miso of beni-zuwaigani crabs have particularly rich umami and sweet flavor, but can be an acquired taste and therefore unfamiliar for many people. Based on the company’s crab processing technologies developed over many years, this product was brought to life to make kani miso more enjoyable for customers of all ages. An abundance of domestic ingredients such as garlic from Aomori Prefecture (Fukuchi white garlic) famed for its rich aroma and sweetness and Daisen fresh cream are added to the kani miso paste from beni-zuwaigani sourced from Sakaiminato, to create a rich and mild taste. No preservatives, coloring agents are used to bring out the natural flavors of the ingredients. The company has also placed emphasis on creating a container that can be easily transported and stored at room temperature. It has a cute shape like an espresso cup, which makes it an appealing small gift or souvenir when visiting friends.
