Ninki Inc. prides itself on being a sake brewery that only produces ginjo sake and only by hand using traditional methods and tools. Made by brewing JAS-certified organic rice grains that have been polished down to 60% in a wooden barrel, NINKI-ICHI GREEN NINKI ORGANIC JUNMAIGINJO has been certified organic in Japan, Canada (COR, which is equivalent to organic standards in the US (NOP) and Taiwan) and EU. The wooden barrel used to ferment sake is made through exceptional craftsmanship using 100-year-old cedar wood cultivated over 400 years by the Japanese people, making it an exquisite Japanese traditional craft that can withstand the test of time, for over 100 years. Thanks to the wooden barrel, which boasts one of the largest sizes in Japan (7 shaku, 6,500 L), sake with complexity and deep flavors is produced. While sake is usually pasteurized twice, Ninki’s sake is pasteurized only once to retain freshness. In addition, sake is stored in bottles instead of a tank to avoid exposure to air and degradation of its quality. NINKI-ICHI GREEN NINKI ORGANIC JUNMAIGINJO is clean, not too rich and well-balanced with sweetness and crisp dryness, which makes a perfect choice to drink during the meal. It is best when drunk it as nuru-kan (warm hot) or chilled.
