Rare cheese mizumanju

KANEI CO., LTD. (Oita)

Rare (uncooked) cheese mizumanju was created 17 years ago, bringing together our beloved art of sweets making with both tradition and innovation. Mizumanju is traditional Japanese sweets said to have originated during the Meiji period (1868-1912) in Gifu Prefecture and became popular across the country. In this modern twist of the mizumanju, ingredients have been carefully selected over numerous modifications, foregoing conventional ingredients such as hon-kudzu starch and hon-warabi powder due to considerations for distribution, shelf life and price. At the beginning the product was only available in chilled packaging, but since around five years ago, it became possible to be shipped in frozen packaging anywhere in the country. The adorable sweet is made by wrapping rare (uncooked) cheese made from Australian cream cheese inside smooth and bouncy starch, which is lightly flavored with grape for a refreshing pairing with the cheese. True to its delicate appearance, each product is made by the hands of skilled craftsperson to bring out its best flavor. Kanei is proud to present this original product challenged 17 years ago by breathing new life into a traditional Japanese confection.
