White Birch syrup “Shirogane no Shizuku”

Shirogane no shizuku is Japan’s first sap syrup made from tree sap collected in Japan’s largest white birch forest in Hiraniwa Kogen (highlands) in Kuji City, Iwate Prefecture. Densely forested, the city has traditionally benefited from the blessings of the beautiful white birch trees and developed a unique culture around them which remained almost unknown not only in Japan but even in the Tohoku region. With this in mind, Shirogane no shizuku was brought to life with the purpose of introducing the beautiful nature and local culture of Kuji and Hiraniwa Kogen through food to a wider audience. In order to maximize the natural sweet flavors of the white birch tree sap, the syrup was produced by boiling down the sap to about half using the company’s unique method. However, the delicious flavors of the syrup cannot be achieved simply by boiling down the tree sap. The unparalleled flavors were brought out thanks to the natural resource specific to the area and the techniques of the local craftspeople. The subtle color of the sap reminiscent of “shirogane,” or platinum in Japanese, the delicateness of its slightly crisp flavors and the package of a pure white color together embody the beauty of the white birch forest the region takes pride in.
