“SHIRO-MECHI。” uses semi-liquid rice puree made from rice grown in Niigata which have been processed in a special machine that can heat, compress, cut and stir rice all at once. There are four flavors of salt, white sesame, black sesame and potato, each produced by mixing into the semi-liquid rice puree which is then placed on the sheet pan and pressed one by one by hand to make super thin round pieces that are baked in an oven. Generally, the dough of senbei rice crackers is shaped using a cutter and then baked or fried, so it is quite rare to use a semi-liquid puree to make senbei rice crackers or chips. In this way, ingredients used for flavoring can be easily blended into the puree while the bake time can be also shortened. Local vegetables and fruits are used as flavoring ingredients to create a product unique to the region. “SHIRO-MECHI。” that is non-fried and does not contain any colorings, preservatives or additives is neither a rice cracker nor a snack, but it is a new type of product that is healthy and world’s thinnest white rice chips.
