These canned delicacies feature mentaiko, which is seasoned cod roe that is a specialty of Fukuoka Prefecture. To allow people outside Japan to enjoy mentaiko, the producers traveled around the world in pursuit of the taste that would fit the local cuisine. As a result, mentaiko mixed with garlic oil and tuna was developed to match the taste of such foods as pasta and pizza. Although mentaiko is normally eaten raw, these products are cooked and sold as canned food so that they can be stored for a long time at room temperature. The cod roe skin is removed and only the egg (caviar) part is included, keeping in mind some foreigners who might not like the appearance of mentaiko’s skin and its fishy taste.
