This is an ice cream made using only the “sakekasu (sake lees)” extracted when creating the world-famous sake, Dassai. Dassai is the ultimate sake, which is made with extremely polished Yamada-nishiki rice, known for being the best rice for sake-making, and fermented after removing all of the unpleasant flavors. This sakekasu is imbued with the rich taste of Yamada-nishiki. The product development began with the idea of making use of the sakekasu, recently known as health food, as well as the wish to provide the rich taste to a wider range of consumers, from adults who do not drink alcohol to children.
