Additive-free meringue made with lemon from Hiroshima offering a fresh flavor and light texture
The high quality lemons produced along the side of Tobishima Kaido in Hiroshima Prefecture is gently wrapped in meringue, creating the light texture snack Remonge. Following the recent snack trend, its fruity taste was achieved by adding the acid taste and flavor of lemon to meringue. By using rice flour instead of cornstarch, the texture is so surprisingly light that the crispy piece would melt in an instant once put in the mouth. Also, a good taste balance was achieved by covering each piece with a foam containing lemon juice and peel, and finally baking it slowly in a low temperature. This lemon meringue, which is free of preservatives, artificial sweeteners or additives, is a special snack that allows enjoying the exquisite lemon taste for everyone, from children and pregnant mothers to elderly people.
Ohsaki-shimojima where Akinada Tobishima Kaido runs through is an island with a history of 100 years of lemon cultivation and it still has the largest production in Japan. We wanted to create a snack that everyone from children to elderly people can enjoy.
